Forget boring bangers and burgers, the way to go this summer is to try barbecued British trout.

Trout is a very lean fish, high in unsaturated oils and low in saturated fats, visible by fine marbling in the flesh. It falls into the oily fish category which means it’s ideal for cooking over coals as the oils help the fish to cook quickly and stay moist.

We are all recommend by the NHS to eat oily fish such as trout once a week, as part of a balanced diet. Trout is a fantastic source of heart healthy Omega 3 oils and other essential nutrients. So, barbecues are another great opportunity for enjoying the wonderful taste of fresh trout and it’s ready in minutes.

It is easy to cook this versatile fish in a variety of ways on the barbecue. Sear boneless fillets directly on a well-oiled grill, skewer trout pieces to make kebabs, or wrap up a whole trout in several layers of wet newspaper and cook on the barbecue. A little gentle smoke works so well with delicate trout, very little else is needed.

Or you could simply seal up some trout fillets tightly in a foil parcel with a little butter, lemon slices and dried herbs, and place over the hot grill to steam for 10-15 minutes. The natural, delicate flavour of the trout will shine through and the buttery juices provide a lovely light sauce. Served with new potatoes and salad, it’s a very tasty bbq option and far more nutritious than bangers and burgers!

You could marinate the trout if preferred. For an easy Soy, Orange, Ginger & Honey Marinade, simply combine 1 crushed garlic clove, a knob of grated ginger, 100ml soy sauce, juice of 1 orange and 2 tbsp runny honey. Pour over the trout fillets and marinate for 30 minutes before barbecuing.
