Lovely trout idea from @recipebreakout 🤩

Fish Korma!

After a really busy day today, dinner had to be nice and easy… a typical Monday night meal. I can’t claim this is a totally authentic korma, just a mildly spiced curry with a handful of this and that thrown in! So for added ease I made this with all the pastes… garlic paste, ginger paste and korma paste. Added in a tsp of turmeric for a bit of colour, onions for a bit of crunch and black mustard seeds just because I like them 😆. Then coconut milk and Greek yogurt yogurt for that lovely creamy sauce and a handful of fresh coriander leaves, chilli flakes, a few sultanas, flaked almonds and whatever else you like to finish off! Almost any fish I can think off is great in a curry and this is no exception - Scottish loch trout fillets, pan fried and added into the sauce just before serving. Basmati rice is the obvious accompaniment but we quite like naan bread or flatbreads as an alternative… you need something to mop up the delicious sauce! I’m being very lazy with writing up (and posting) step by step recipes atm. Whilst I feel on the one hand as I’ve been hibernating these first few weeks in Jan, on the other, we’ve been madly beavering away on all kinds of house related projects! Deadline is Wednesday, before we’re let out to play 😂

Give your tastebuds a treat with sustainable British trout! 🐟 Chefs love its mild, clean taste, making it a versatile choice for a variety of dishes. Try out this mouthwatering Honey Glazed Trout Bites recipe for a healthy and delicious meal.

Serves 2

2 x 130g trout fillets
2 large carrots, thinly sliced
6 spring onions, sliced
Sprinkle of sesame seeds
1 lime, cut into quarters
Sprig of coriander or parsley
Cooked rice

Honey Glaze:
1 tbsp of runny honey
1 tbsp soy sauce
1 tsp ginger paste
1 tsp garlic paste
Drizzle of olive oil

Whisk all the glaze ingredients together. Cut each fillet of trout into 5-6 pieces and coat in the glaze. Transfer to an oven proof dish and cook at 180C for 7-8 mins. Retain any leftover glaze to serve on the side.

Divide cooked rice between two bowls, add in the trout, sprinkle with mixed sesame seeds and top with carrot and spring onions.
Finish with a few slices of lime and herbs.
