“This super simple twist on the classic has a couple of steps to it, but is worth the effort, especially as once you have the sauce made and the pasta cooked you can mix everything together and freeze (or chill) in batches until required – then simply defrost and bake.
In this version I have also added some crispy, herby breadcrumbs to bake on the top of the Mac and Cheese to add extra texture and another layer of flavour. A little fish sauce in the cheese sauce enhances the trout and stands up to the cheese a little, if you like, you can add chilli flakes to spice things up a bit. I sometimes add vegetables too – peas, sweetcorn or spinach to make this more of a meal in one but that’s entirely up to you.” – Tim Maddams
