🎄Find you're always in a rush over the Christma

🎄Find you're always in a rush over the Christmas holidays? Why not make a delicious Trout Fish Pie now for the freezer? ❄️ Then simply defrost and pop it in the oven when you're too swamped to cook! 🥧 Get ahead and save yourself some precious time with this amazing recipe. 🌟

Trout and Smoked Haddock Fish Pie
serves 4-6

🥔🐟 Ingredients:
- 1kg floury potatoes (e.g. King Edward or Maris Piper), peeled
- Knob of butter
- Splash of milk
- Salt and pepper
- Handful grated cheddar cheese, if you like
- 30g butter
- 30g plain flour
- 5 spring onions, sliced
- 265g boneless trout fillets, skinned and cut into chunks
- 250g smoked haddock, skinned and cut into chunks
- 400ml milk
- 1 tsp mustard
- Salt and pepper

🔪👩‍🍳 Method:
1️⃣ Preheat the oven to 180 fan.
2️⃣ Cut the potatoes into large chunks and boil in salted water for about 20-25 minutes, until tender. Drain well and mash with a knob of butter and a splash of milk until smooth. Season with salt and pepper.
3️⃣ In a large saucepan, melt the butter and stir in the flour. Cook on low heat for 2 minutes to make a roux. Add the spring onions and cook for another minute.
4️⃣ Gradually add the milk, whisking with a balloon whisk until smooth. Cook for 4-5 minutes, until thickened.
5️⃣ Remove from heat and gently stir in the trout, smoked haddock, mustard, and season with salt and pepper.
6️⃣ Pour the filling into an ovenproof dish and spoon over the mashed potato topping. If you like, sprinkle grated cheese on top.
7️⃣ Cook in the oven for 25 minutes, until golden and bubbling at the sides.
8️⃣ Serve with peas or broccoli on the side.

The lovely people @britishtrout sent me some to try. Fresh and smoked, I knew exactly what I'd do with the fresh, a decent sized fillet, the rest you'll see another time. There's a packet of smoked fish too, I feel something very festive on its way.

I love purple sprouting broccoli, blanched and drained, dressed with anchovies, black olives and lemon. The fish is top quality, very pleased to see it had been scaled, seasoned and cooked for about 8 minutes, crisp skin, soft flesh. Just how I like it. Watch this space for more...
