Blackened Cajun Trout

2 British Trout Fillets
1 tsp Cajun spice mix
Oil for cooking
Method
Rub each trout fillet with Β½ tsp of the Cajun spice mix on the flesh side.
Heat the oil in a frying pan and cook the trout skin side down for 4 minutes or until it starts to crisp.
Flip the fish over and cook for another 3-4 minutes until cooked through.
Serve immediately with a crisp salad.
