Minimal on ingredients and maximum on flavour this is a real crowd pleaser of a dish - and the best thing is that if you have any over, it makes an excellent and simple cold dish too. You can play around with the herbs you use for the crumbs as the seasons change and you can replace mustard with smoked paprika for a different feel altogether as well. You can fling some salad in a bowl as the trout bakes and warm some bread at the same time - job done.
