Upgrade your lunches with this delicious Asian Noo

Upgrade your lunches with this delicious Asian Noodle Salad recipe featuring nutritious trout and spinach! 🥗🐟 Perfect for a light and flavourful meal that will keep you feeling satisfied.

For 4:

4 British trout fillets
300g soba noodles
Bunch spring onions, thinly sliced
100g baby leaf spinach
1 tbsp black sesame seeds
For the dressing:
3 tbsp Miso
2 tbsp mirin
1 tbsp soy sauce
Juice 1 Lemon
Small knob ginger, grated
1 tsp wasabi paste
1 tsp sesame oil

In a large frying pan poach the trout fillets in gently simmering water for 5 mins. Remove skin and flake.
Cook the noodles as instructed on the pack. Drain & cool.
Whisk all the dressing ingredients in a bowl.
To serve toss the noodles with the dressing, spring onions, baby spinach and flaked trout.
Top with sesame seeds.

Looking for a tasty and satisfying meal to welcome

Looking for a tasty and satisfying meal to welcome the first day of Spring? Try our delicious, but easy Trout Fillets with Creamy Orzo recipe! 🐟🍽️🌸

Serves 4:
- 3 tbsp rapeseed oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 300g orzo pasta
- 1 litre vegetable stock
- 2 x 250g bunch asparagus, trimmed and cut into chunks
- 3 tbsp half fat crème fraiche
- 3 tbsp grated parmesan cheese, plus extra to serve
- Handful basil, shredded
- 50g plain flour
- 4 British trout fillets

1. Heat 1 tbsp oil in a large high sided frying pan and cook onion for 4-5 mins.
2. Add garlic and pasta. Pour in a ladleful of stock and cook until stock is absorbed. Repeat using around 200ml stock.
3. Add asparagus and remaining stock, cover and cook for 2 minutes.
4. Stir in crème fraiche and parmesan, season, set aside but keep warm.
5. Heat a frying pan with remaining oil, then coat trout with seasoned flour.
6. Cook trout for 1-1.5 minutes on each side until golden.
7. Stir basil into orzo, divide between plates, and top with trout and basil leaves.
8. Serve with extra parmesan.
