Looking for a delicious and healthy lunch option?

Looking for a delicious and healthy lunch option? Look no further than this creamy trout pate! Made with hot smoked trout fillets, cream cheese, lemon juice & a kick of horseradish or mustard, this pate is perfect for slathering onto toast or pitta bread.

Not only is this recipe quick and easy to make, but it's also incredibly versatile. Whether you're enjoying it on a bagel, in a salad, or as a sandwich filling, you're sure to love the fresh and flavourful taste of hot smoked trout.

Smoked Trout Pate
Serves 4

125g hot smoked British trout fillets
125g full fat cream cheese
juice of half a lemon
Salt and pepper
2 tsp creamed horseradish or mustard, to taste
4 slices of toasted bread
Mustard cress or micro herbs, to garnish

Remove any skin from the hot smoked trout fillets and mash in a bowl along with the cream cheese. Try to retain a bit of texture.
Add the lemon juice and season with salt and pepper
Stir in the creamed horseradish or mustard to taste, depending how much of a kick you like.
Cover with cling film and allow to chill in the fridge.
When ready to eat, spread the pate over toasted bread and sprinkle with the mustard cress.

Try this Asian-inspired Steamed Trout with Ginger

Try this Asian-inspired Steamed Trout with Ginger & Spring Onions recipe. The trout is packed with heart-healthy omega 3's, while the ginger and garlic add a flavourful kick and help boost your immune system. Plus, it's all cooked in one pot with very little fat - win win! Give it a try and let us know what you think 🐟🧄🍲

serves 4

4 pak choi, halved lengthways
4 British trout fillets
1 bunch spring onions, trimmed, halved and sliced into matchsticks
70g Large chunk ginger, peeled and cut into thin matchsticks
3 cloves garlic, finely sliced
2 tbsp mirin
2 tbsp soy sauce – reduced sodium if preferred
50ml Chinese rice wine
1 tbsp sesame oil
Cooked rice to serve

Heat oven to 180C fan.
Mix spring onion, ginger and garlic. Sprinkle a third over the bottom of a casserole dish or roasting tin.
Layer pak choi on top. Sprinkle over another third of spring onion mix. Top with trout.
Mix mirin, soy sauce, rice wine and sesame oil. Pour over fish, then scatter over remaining spring onion mix and season with black pepper.
Put on lid, or cover tightly with foil, and bake for 30 minutes.
Serve with rice.
